Certified AllerTrainer® (CAT) Celiac Disease Cookbook Author Speaker Educator

Annie Toro Lopez is not a consultant who learned food allergy safety from a textbook. She has celiac disease and navigates food safety personally, every single day. She knows what it feels like to sit down at a restaurant table and wonder if she'll be safe — and to know that if she isn't, she could be sick for days or weeks. That experience is the foundation of everything she does.

She is a Certified AllerTrainer® (CAT) through MenuTrinfo, a two-time cookbook author including Simply Gluten-Free: Real Ingredients for Everyday Life, an award-winning educator with a decade of classroom experience, and a food systems advocate who has spent her career at the intersection of food, community, and education. Her students achieved the number one literacy scores in Aurora Public Schools. She brings the same care and dedication to every training engagement.

Annie grew up working in a family restaurant. She has farmed, seeded, cooked, taught, written, and spoken about food her entire life. When she walks into your kitchen, she understands it from every angle.

Massachusetts
Requires a certified food protection manager with allergen training. Allergen awareness posters required in all staff areas.
Illinois
At least one manager on duty must complete allergen training at all times. Relevant for Chicago-area operations.
Virginia
Mandates food allergy awareness training for all restaurant employees.
California
2025 ADDE Act requires allergen disclosure on menus. Food handlers must document allergen knowledge.
Rhode Island
Mandates food allergen training for food operators statewide.
Maryland
Requires allergen awareness poster display in all restaurant staff areas.
Michigan
Restaurants serving unpackaged food must post an allergy advisory on menus or menu boards.
Colorado & Beyond
Colorado, Nebraska, Missouri, and Illinois markets actively monitored. The FDA Food Code recommends allergen training nationally.
